Tuna Salad



This recipe is a bit different because it has curry in it but I really like the addition. And the dill gives it a fresh taste. Try it, see what you think!


2 cans light tuna, drained and flaked
6 tablespoons fat free mayonnaise (I think I used less)
2 tablespoons Parmesan cheese -I used the kind you grate yourself.
2 tablespoons sweet pickle relish
1/2 teaspoon dried minced onion flakes
1/4 teaspoon curry powder
2 tablespoon fresh parsley
1 teaspoon dried dill weed
1/2 teaspoon garlic powder

(I pretty much just eyeballed all the spices)

Mix it all together and serve in a pita, on bread, with crackers.

Apple Pie



pastry for a 9 inch double crust pie
1/2 cup unsalted butter
3 tablespoons all-purpose flour
1/4 cup water
1/2 cup white sugar
1/2 cup packed brown sugar
*I also added some cinnamon (about a tbsp) and some nutmeg (maybe 1 tsp)
8 apples - peeled, cored and sliced

Preheat oven to 425 degrees F (220 degrees C). Melt the butter in a saucepan. Stir in flour to form a paste. Add water, white sugar and brown sugar, cinnamon and nutmeg and bring to a boil. Reduce temperature and let simmer.

Place the bottom crust in your pan. Mix the hot filling with the apples then put into the pie crust. Top with the other pastry. Be sure to cut large slits into the top for steam. You can brush the top of your pie with egg wash and decorative sugar if you'd like.

Bake 15 minutes in the preheated oven. Reduce the temperature to 350 degrees F (175 degrees C). Continue baking for 35 to 45 minutes, until apples are soft.

It is quite sweet so you may want to decrease the amount of sugar. I like it sweet, served warm with vanilla ice cream
